...and other stuff.

Right- for the food/technical genii on the forum.

I'm growing some chillies (cayenne) this year and started thinking about how nice it would be to smoke the little fellers when they're grown.

I've had a look on the webnet-thingie and there don't seem to be any domestic smoking kilns on offer- mostly industrial stuff.

As this is an occasional project for probably not a lot of return (apart from me, my bro and a mate, not much else may get smoked!), I thought about the possibilities of making a small kiln. But there don't seem to be many websites about this, either.

Does anyone know anything about building such implements?

Please help!

rig something up in a pressure cooker?

adapt this method of tea-smoking chicken?

2. In a small bowl mix together the sugar, rice and tea leaves.
3. Line the base and sides of a large sauté pan or wok with foil.
4. Sprinkle the tea mixture over the foil and cover with another layer of foil.
5. Place a lid on the pan and the pan on the heat.
6. When the tea mixture begins to smoke, remove the lid and place the chicken on top of the foil.
7. Season the chicken and drizzle over the oil.
8. Place the lid back on the pan and leave to smoke for 12-15 minutes or until the chicken is cooked through.

Just a thought :)

Thats interesting Ive just bought a mini greenhouse to grow a few chillies and peppers, If they all come to fruition, I should be able to supply ASDA and Sainsbury,s for a few weeks, plus bring some down to the AR. Im looking forward to founding out more myself.

I have made and destroyed several smokers in tha past, including one which burned the garden decking to bits!

All you need is a heat source and a box with a tube to connect them.

I have a small chiminea, a piece of kitchen hood extractor tube and a metal bin.

The chiminea provides the smoke, through the tube into the bottom of the bin. It's a cold smoke system, ideal for chillies.

You can make it out of anything tyou have to hand really!

I am growing loads this year, early Jalapenos for smoking, numex orange, pasilla bajio, chinese pot, bih jolokia (hottest in the world) aji lemon, and a few others I can't remember.

Mine are in a plastic greenhouse in the dining room for another month at least, then into the greenhouse in the garden.

It may not be the coolest thing in the world, but I like it!

Bluepete

You can buy Scotch Bonnet at Tesco, and yes, I use it a lot. It's very good in marinades.
I bought 2.5kg of them a few years ago from the market in M'cr for a mass BBQ. I spent several hours chopping them up by the end of which, my fingers were blistered and I couldn't feel anything for three days!
Capsaicin is very scary stuff!

I'll share the Bih Jolokia out if they mature!

I'm just growing in a couple of pots indoors (was a seeding tray until Sat, when I knocked it all over the floor and had to do an emergency early re-pot! Casualties were limited).

I'm very excited and am frequently checking the shoots to see how they're doing!

Cheers for the ideas though- will look into some sort of makeshift apparatus. Looks like for cold kilning, a closed system is recommended.

My bro bought a bottle of "6 million Scovilles" chilli extract the other week- god alone knows what you'd use it for- it looks lethal and comes with all sorts of health warnings! Don't see much point myself- I'm more of a flavour and heat man, instead of heat and HEAT!!

I had mine sitting on top of a portable electric heater (switched off, mind) near the windows, for a bit of daylight- was tidying the flat and klutzed it, followed by much swearing.

Oh well- they're doing well. I'm hopeful, despite killing a bonsai (was gutted about that- one of the best birthday pressies I've ever had) and not having much joy re-potting Basil plants bought from Sainsburys. My flat is, understandably, usually devoid of vegetation (except me, of course).

Bluepete
14-04-08, 05:52 PM
Nope, I just sing to them each and every evening as we eat dinner. I have also stopped putting chilli sauce on my food at the table, wouldn't want to upset them by showing their friends pulverised bodies being eaten now would I?

It's over five weeks since they were planted in a heated seed tray, then they have lived in the mini greenhouse by a west facing window. Most are quite hot chillis, so have a long maturation period, hence the early sowing.
The really big plants are about 5 inches and are the early jalapenos which shouls be fully ripe by August. The others should just ripen by mid to late September.

I get them from Chileseeds (http://www.chileseeds.co.uk/) who have been very good. Helpfull germination and care from The Chileman.org (http://www.thechileman.org/index.php) Tesco have greenhouse watering kits at four quid a go, I bought three which is enough for 45 pots.

You need a fish smoker! Very readily available and so are the chips in several varieties.

Like this one...
http://www.snowbee.co.uk/page14.html#smoker

I do a lot of trout salmon mackeral and loads of other stuff in one.

You can also get Savu smoker sacks that you use once and throw away.

I've tried both "flavours" and they are Ok but tend to dry fish out even when smoked with honey. Shoudl be fine for the chillies though.

You can get them online from various places and they are the cheaper options at about £2.25 each

Hi everyone. I have been growing some chillies and am intreged with smoking them. One plant is currently in flower and the others are a few weeks behind. I have access to a large smoker (my dad makes his own jerky) once smoked are they eddable as they are or are they for use in cooking. Presumably they are not for roling with some backie and getting high??? :smt0281648

Smoked chilis make "chipotle" which can be used as the basis for a really, really superb sauce. I buy this stuff (http://www.southdevonchillifarm.co.uk/shop/index.php?target=products&product_id=33).

If all goes to plan, I will be smoking the early Jalapenos and some Pasilla Bajio which are long, black and have a natural smoke flavour.

There should be so many chilies on the 35 or so plants I have that I may even be able to dry some and offer them on here for a reasonable offer!

I have taken the first crop of pasilla bajio, some of which are about 8 inches long and they are currenly in the smoker, which is new today! It works a treat and smells really good too!

Most importantly though, the super hot, burn the skin off your tongue and make you wish for beer slushys Bih Jolokia are flowering and are being pollinated all in their hundred! The bigest is only about 1cm yet, but there should be one hell of a crop!

A gas bbq?

NOOOOOOOOOOOOOOO! LOL!

I had a slight disaster- you see, Burt broke in 2 when I was repotting recently. I put the severed top half in a pot and with some rooting hormone the next day. Now I have 3 chilli plants- Burt, Ernie and Klutz.

Sadly, Klutz withered away over 2 weeks. However- I trimmed a lot off and left just stem. There are a few little shoots appearing, so I hope to have Englands first Phoenix chilli coming soon!

Burt, however- has properly bushed out now- the root to stem ratio is pretty high. Am hoping for a bumper crop later this year!

Quick question for those in the know- is it possible to keep an annual plant on as a perenial? Will it flower again next year if I do?

Yep, you can keep chilis, you juct need to trim them right down and keep them warm and only slightly damp over winter. Come spring, lots of fertiliser and water, warmth and tcl and off you go again!

In all honesty, it's a flavour thing. Smoked chili makes chipotle, which is a superb ingredient in sauces and general cooking. Use Mesquite, Hickory or like me, cut down a pear tree and use that instead! Just keep the smoke under 90C or they get cooked. Then dry in the oven at about 70 - 80C overnight.

Pete.

PS, hows the leg?

Finally cropped most of the chilis now. I'm making them into sauces to preserve them and so far have done the Aji Lemon which became all colours from yellow, orange, purple green and mixtures of everything. I think it's from pollinating them with the same brush as all the others. The sauce is raw chilli, cider vinegar, fresh lemon juice and a dash of salt. Fresh and easy!

The sauce the Aji's make is FIERCELY hot. A real raw, in your face heat with loads of punch! Much hotter than expected and I have about half a litre of the stuff!

Also made today is the first batch of Bih Jolokia sauce. I'm not sure how to describe the flavour of this stuff! Twenty pods made 60ml of sauce. The pods are no more than 1cm long and about five to eight milimeters across. It's the hottest thing I have ever tasted. The endorphin rush is HUGE from just a tiny drop. It's hot, really, really hot with a magnificent flavour. There is so much depth to the taste, it has real flavour as well as the punch of the heat. Did I mention it's a bit hot? There will be enough pods to make another three or four bottles at least!

They look like this.

I have run out of cider vinegar, so will make the others tomorrow if I survive tea which will have some chilli sauce on it!

The Chinese Pots are also now fully ripe, there must be 500 plus on each bush, so I am picking them and drying them in the airing cupboard to make my own chilli powder. Some will get smoked a bit to make some smoky powder.

I had to throw away about six plants, all the numex orange and a couple of other, unknown types. They just wouldn't set fruit, so were a waste of space. They stayed in the garden though and looked very good too! The recent frosts have well and truly done them in, so they are in the bin now.

The greenhouse is now a banana and canna nursery again, all wrapped up in fleece for the winter.

Just need to choose which varieties to grow next year now!

Bump indeed Sarah!

It's that time of the year folks, get the chilli seeds ordered,

These guys (http://www.chileseeds.co.uk/hot_chili_pepper_seed.htm) are the best, over 200 varieties of every possible type of chilli you could imagine, from small, window sill ornamentals to 5 foot high jungle plants!

Sow indoors in very early March for good crops this year.

Shall we get a chilli exchange going?

Pete.

PS, still got a litre or more of the hottest sauce I have ever met left! Only a few drops needed to get those endorphins rushing!!

This thread title confused me..
I thought like grinding them down, mixxing them with some baccy, and putting it in a skin..
Think its possible?

Back on topic, easy to grow chilli plants?

Bit late on this thread, but maybe for next year. Plenty of smokers here.

I got confused again :(

I thought the same. I can't imagine it would taste very nice.

I used to grow my own chillies. Before we had the second bathroom decorated it was made redundant for a couple of months. I i set up an indoor greenhouse in there, along with a table with sprouting plants. I only ever got one harvest in the end but it was pretty fun. They need a lot of care though, not enough watering and they can die in a day.

for no other reason than they make me giggle! I'm going to grow them in an old toilet I have (don't ask!) so I can point at the Peters in the porcelain!

Ive got 4 seed pods from last years harvest, they,ve been out all winter so far, will these grow form seed do you think Pete ?

Bluepete

They should do Stewie, so long as the pods dried well with no mould. Give it a go, can't hurt can it?

If you fancy, PM me your address, I'll pop a few seeds in the post for you.

Why does that sound so dirty?

Pete!!

I fancy a go at this, but have no idea where to start. I do like the odd drop of tabasco sauce or the extra-hot piri piri stuff, but I'm not quite as mad for it as bluepete!

What type of plant you reckon is a good one, or just pick some that sound nice?
Is now about the time to start planting?

I have windowsill and a greenhouse.

Chris, just choose a packet of seeds from http://www.chileseeds.co.uk/ They have hints and tips on growing etc. It's cheap and easy and you already have the expensive bit, the greenhouse!

I've just sowed mine today, heated tray in the dining room. Seven types,

Cheyenne Chilli
Demon Red
Goat Horn
Maya Pimento
Padron Chilli Pepper
Ring of Fire
Tongues of Fire.

I chickened out of the Peter Peppers, I just couldn't face explaining them to the kids!
Imagine it,

"Dad, why does that plant look like it's covered in willies?" then asking to take some to school for show and tell.

Social services would have a field day!!

Have yours germinated yet Sarah? The early Jalapenos were awesome last year, I smoked a load, used them in salsa, salads, on pizza. They made superb sauces too! Loads of fruit.

Yes. They are in unheated propagators on the windowsill, but there's a radiator under the window and i think that they like that!

Not too bad Sarah. Good germination rates this year, soaking the seeds in cold weak tea seemed to work. I potted them on from the seed plugs a week ago.

Mine are indesperate need of (re)potting. They are currently still in the seed trays that i sowed them in. Looking pretty healthy though. I'll do some repotting and and pics in a bit :-)

I'm late onto the wagon again this year- going to plant seeds this weekend.

Anything I can do to speed up germination?

I have purple jalapenos, purple princes and cayenne.
