Ok, as you might have seen i'm selling the bike due to work relocation.

I was wondering, as regards test-riding bikes, is this something people allow? Provided person brings full insurance cover? Obviously it's a bit different to with a car as I can't punch him if he tries to nick it.

Also, what's the safest method of payment now? I understand bankers drafts are about as good as a turnip, so should I insist on cash? In hand or go to bank and deposit before giving bike?

No test rides unless they leave all their details and the full asking price in cash!

When I sold my bike, I did let them see the bike running but made sure they didn't ride off on it. They paid a cash deposit when we agreed the sale, and paid the rest in cash as well when they collected the bike.

A serious buyer will know if they want the bike on inspection.A deal can be done subject to test ride.Then they should have no problem leaving the full amount with you prior to test ride on the understanding they bend it they bought it.
Time wasters will want test rides and all sorts then decide they dont like the fuel cap or the pillion footpegs or the gear lever position.
Test rides are fine as long as the deal is done.
