Just sold my sv.

I'm pretty sure that at some point in the future I'll buy another bike(probably 5 yrs away)
I've got 5 yrs no claims bonus that I don't want to let lapse.

What are your thoughts on on buying a crappy old bike and leaving it to rot in the back of the garage just so I keep my NCB up for when I get back on 2 wheels proper.

Will they take it into account? (i recall the question, what size engine bike have you ridden in the last 3 yrs? )

I think that's a good idea - go for a 50cc-er something like a honda vision with a limited mileage of 1000 miles, should be able to insure it for sub £100, easily, which will keep the no claims for when you decide to come back to big(ger) bikes.

I don't believe engine size is ever mentioned, as long as you have a full license

Buy a frame, SORN it in your name... When you get a full bike, tell DVLA the frame is now scrap...

I reckon five years worth of premiums will be unlikely to amount to a saving when you come to insure your next real bike.
A better idea would be to not give up biking for the next five years?
