Depends in which area you live and how active she is---------------You can book me a helicopter trip for mine
My mum is quite active and just wants to do something fun. We were going to Diggerland, but you need a driving licence. Paintball in tanks is a little out of it me thinks!
Take her zorbing...
Suggested that already Daniel san, but shes claustrophobic
That indoor Skydiving place in Milton Keynes...
The big wind tunnel thing.....
Or what about indoor skiing?
Yup looked at that as well, but it works out at £25 a minute for the skydiving which i think is a tad expensive even if it is cool.
£150 of garden vouchers - works for my old dear :)

I just love the idea of tankballing which is why I put it first and then added 'and other more tame stuff' bit on the end... :p
If you check out the site, you'll see they do LOTS of stuff that could suit almost anyone.
:D
