Easy....this is a fail safe recipe - ask Lily and Drew!

In a mixing bowl, put 4 ounces PLAIN flour (don't use SF), 4 whole large eggs, a pinch of salt and half a pint of milk (whole or semi). Whack it all in together and whisk the sh!t out of it...the lumps will disappear in no time, if you can, stick it in the fridge for 20 mins while you........

Put sausages in foil, wrap up and pop in the oven on a low temp (gas4/160c) for 20 minutes to part pre cook them.

Take sausages out of the oven, turn it up to Gas 7/220c and pour enough vegetable oil into your baking dish to just cover the bottom and place it into the oven.
Take the batter out of the fridge and give it a quick whisk, get the sausages ready and after 5 mins in the oven, the oil will be up to temp. Take the dish out, put the sausages in and pour the batter all over them and around them. Do this as quickly as you can and stick it straight back in the oven.

WARNING.....this is the best batter recipe for toad in hole or yorkshire puds and it will rise....A LOT, so make sure you put the dish in the centre or low oven and don't have any shelves above it. I've made this recipe countless times and the batter never fails to reach at least 6inches. Leave it in the oven at Gas 7/220c for about 20-30 mins or until the top and edges of the batter have gone a real deep brown.

If you want to make a nice onion gravy to go with it too......let me know!

Yep. I started using the recipe I posted years and years ago and it never fails, no matter who is making it. Plus, when you use it for yorkshire puds, you get massive ones with little holes in the top, so you can pour gravy in them and when you're coming to the end of your roast dinner, cut into the yorkshire pud and get fresh hot gravy all over your plate.....Yum Yum!

I wonder why me and Stretchie are getting fat???

Don't use an electric whisk for this, you want air in it, but it's not like making a cake batter. Just chuck it all in a big bowl and whisk until smooth....will literally only take a minute. The odd lump will cook out in the oven, but I doubt you'll have any after a minutes good whisk.

4 ounces is 115grams. (actually 113g, but 115 is what most convert it to).

To really finish off this dish then make some oinion gravy. Slice up some onions and shallow fry them in plenty of oil. Add a dash of brown sugar & cook them real slow, they'll carameise to a rich brown gavy which will go with toad in da hole perfectly.

If find it hard to fry on the hob, put the onions into the oven after staring them off on the hob

Its a disappearing skill, Im with you, much nicer and healthier cooking from scratch, but M&S meals are not bad either!

M&S's Syeam Cusine range saved me a hell of a lot of time and trouble for a few years. Then i moved and there is no M&S near me now :(

I got a Jamie Oliver cookbook as a crimbo pressie a few years back, one of his first i think, and most of the recipies were easy and quick. I loved the chicken in foil bag for example. Just dont try the stuffed onion unless you have the patience of a saint, lots of spare time and onions too, and enjoy stabbing yourself in the hand repeatedly.
They do taste friggin great tho :)

A tip for next time you boil tatties for making mash......put them in the pan with cold water, then put them on the heat...the cook more evenly so you don't get soggy outer edges with harder centres....makes creamier mash if they cook evenly....and after you mashed them....use a whisk really vigorously as again, will help make it really smoothe.

i have done onion gravy before - and sugar is good - brown sugar and used it to caramelise the gravy. Makes a big difference

That's why I cook them out so long.....an hour at least in a tiny bit of oil and they caremelise into a really deep brown mass of sweet onion softness.......I usually cook them out until they are like this (the right stage if you're making French Onion Soup) and then add a little chopped fresh sage and arrowroot (keeps it clear) I then put in the juices that I've saved from part cooking the sausages beforehand and a mild chicken stock. No need for colour as the onions are dark enough and the sage goes really well with all sausages.

I'll try it with sugar, but maybe not caremelise the ionions quite so much or they'll be too sweet.

Thanks Wizurd!

It is in there. Here's what I wrote. Slice onions and fry them in plenty of oil, very slowly. Add a bit of brown sugar to add to the flavour. Fry until brown, as this is the sugars in the onions caramelizing.

If you bake them in the oven on a low heat for ages they'll go soft and brown, without the brown sugar, but adding the brown sugar cuts down the time to get them brown and you can do this on the hob.

Add to a bisto mix if you want, but I don't.

Thank you, will have to make that this week. Itīs like seeing an advert on TV for a fantastic new thing, I have to go and get it ;)

Although, I a friend of mine is in the dog house at the moment for telling me about his lovely Angel Delight desert (butterscotch flavour!) Annoyingly though it seems itīs another thing that the Portuguese are missing out on, sadly they donīt sell it here :(

Sorry for the derail.

Well tell me what you need for your friends recipe and we'll ship it out to you!
