Right, i am considering marketing and selling my bbq rib dry rub and sauce mix, but before i invest anything into it, i would like to have a few people test it out for me at home and report back on both the flavour and how easy it is to follow the packet instructions.
So, i would prefer it to be people who have had ribs regularly and will know good ribs when they have them and you'll need to be able to buy a couple of racks of pork ribs and have ketchup, white wine vinegr or normal vinegar and runny honey.
If you want to be my guinea pig and let me send you a sample, please put your name below and form a list. I'll close the list if it gets to 20 as it will get too expensive otherwise. MBK has just had some for lunch, but i'll let her tell you if she liked them. All you'll need to is report back and tell me honestly what you think, good or bad. Ta x
You might want to speak to my other half Jax, as shes a trained chef and is much better at these things then I can ever be. I'll just end up saying it tastes nice.

well, i'll sell the dry rub and sauce mix as i've made them to complemen eachother. The rub has a nice kick and lots of deep flavours to it and the sauce is made to be sweet and sticky wih teeny sharpness to it that counters the depth and kick of the ribs. I marinate overnight and then cook spare ribs at the bottom of a 100'c oven for 7 ours, baby back ribs get 5 hours. Covered with foil and with a teeny bit of water under the bones, they cook really nicely.

Mmmmm, ribs! Please put me on the list too GG. We try and have BBQs at least once a month where I live where we all get together so this would be the perfect oppurtunity to try your mix on some hungry islanders.

A good friend of mine works for the Hilton Hotel as a chef in portsmouth. he is always cooking for us. he is quite a critic though so if you want to send me some ill pass them on and get him to critique!

Kwak, I wouldn't really want the sauce to be used on another batch of ribs for a critique as I've made the sauce to go with my dry rub and it's been 6 years in the making to get it to where I am happy with it...lol. I know, I'm crazy. You're more than welcome to put the sauce on your ribs, but it might not go well with them as I don't know what the rub on your ribs is like...if that makes sense!

Can't he just....haha. He's getting better, but yep....last time I made these ribs him and Squirrel polished off five racks between them....greedy bar stewards!!!

Neither am I Phil....I hate the idea of gristle or tendons or fat that hasn't rendered so I only eat mine. But...the way they are cooked, they are not like that at all. The rub would also work really well on salmon, trout or chicken. You could even use it for beef, but I have another one for that.

Well I do the cooking in this house and I have done rub in spices etc before so from a typical family of 4.5 I can give you a view, lets put it this way, the kids wont tell porkies.

I love ribs however, i never cook them at home. The sauce is always jaust a part of the Rib expeirence. Having a prefectly cooked rack of ribs is the main thing for me, if this is accompanied by a decent sauce (Sticky, sweet, smokey with a hint of biterness) then all the better.
If someone wants to cook me some ribs they i will come round and give it a try :)

V- you can ask Tara as she's having some. I'll send instructions as well. Basically, the rub is smokey, lots of layers and flavours and has a good kick to it. The sauce has been developed to be sweet and sticky, with smokey flavours and a sharp edge to cut through the heat of the ribs and the sweetness. Cooked my way, they end up the way i think ribs should be. The meat doesn't fall off the bone, rather it comes away easily, being tender but not stringy and holding the sauce well. X

you're in Sally, it'll be a week or two as i have to get the supplies delivered an want to lbel properly. I know you're no buying them, but i want to do things by the book from the start.
OK then since i was one of the first to receive my sample - I guess i will be the first to report back.
OMG how good were those ribs the meat fell off the bone the rub was so easy to use and the ribs were so tasty i did about 40 ribs and wayne and gary and I ate the lot. i am under orders to get more and make the ribs again. the rub was smokey and sweet i marinaded mine for about 18 hours but overnight will be fine just make sure you cook the ribs really slowly and the meat will fall off the bone
GG can i have some more please ;)

like them is a bit of an understatement i've never seen food disappear so fasr in my life i normally can take or leave ribs to be honest as they a usually over cooked and chewy these were so moist and so tender delicious

I had ribs at the harvester early in the week. Firstly they weren't a patch on GG's local pubs......secondly, I was sat there thinking, "bet these will taste carp compared to GG's".
I really can't wait.

vt, we'll get it sorted.
T, get 200g of good dark chocolate, 5 egg whites, 3 egg yolks (you could make egg fried rice with the spare yolks), 50g caster sugar and a bit extra for the ramekins, 150g unsalted butter, 2tbsp of rum or brandy, 1tsp cinnamon and 1tsp ginger (both ground).
Melt the chocolate in a bowl over a pan of water on very gentle heat, don't let the water boil or touch the bowl of chocolate.
Mix up your egg yolks and melt 50g of the butter. When the butter is melted, brush it all around the inside of the ramekins and then do the same with the extra caster sugar.
Now, when the chocolate is all melted, take the bowl out and add the brandy or rum, the cinnamon and the ginger. Mix quickly, then add the egg yolks and mix really quickly. It will firm up, but pop it back over the pan and add the butter, cubed. Mix through til the butter is melted and remove from heat again.
Now, whisk the egg whites until white and fluffy and slowly add the caster sugar until you have glossy soft peak stage. Don't over whisk. If you get anything harder than just soft peaks, it won't fold in.
Right, you need to fold the whites into the chocolate now, start with 1 big spoonful of egg whites and mix in well with the chocolate. Now you can add the rest of the whites bit by bit, folding in very gently with a very light touch until all the whites are incorporated. It's important here not to over fold. It's best to still have a marbled effect than have it over worked. Fill your ramekins right to the top and use a knife to scrape across the top, making a flat top that is parrallel wit the top of the ramekins. Before popping in the fridge, you need to clean thd edges. Wet a finger or thumb and run it around the inner edge of the ramekin. You should end up with a little chocolate on your thumb, but cleaning the edge properly means that you give a smooth edge to allow the souffle to rise. Pop in fridge for up to 12 hours before cooking.

Place the ramekins on a flat oven tray and put onto the middle shelf of the oven. Remove any upper shelves to allow room to rise.
Cook for precisely 11 minutes. No more, no less.
Take them out and serve straight away with cream, ice cream or custard.

I would like to say....I consider myself a bit of a "Rib Expert" as it is something that I eat whenever we are out and its on the menu. These ribs were without a doubt the best ribs I have ever eaten.
The rub gave the ribs such a lovely flavour, not overpowering, just right. Then when topped with the sauce......WOW, WOW and WOW some more. GG.....brilliant recipes. MWAH.
