Just watched a tutorial on how to do it so I thought I'd share my first effort.

Taken on a recent trip to the lakes, i know the skys a bit blown out but oh well.

Lots of ways of achieving the same effect. On mine, the jump top in red was just a colour mask. For the horse, I duplicated the whole image as a new object above the old. Desaturated the new object to make it black & white and then just erased the bits I wanted to see in colour, so the original image showed through from underneath

Easy to do on iPhone too. ColourSplash app very easy to use after reading the 'how to' & having a play. messed about with this one of the wife. It's a professional pic that I lobbed on my iPhone & tinkered with.

as people have said, lots of ways to do it but the above method is what i used, the tutorial i followed was from a CD i got with a copy of Digital Photo,

already posted this in my only little Photoshop thread its a bit more than just colour popping as you call it.
I did a bit more than that but still fairly similar result.

similar to how I do it as I feel there more control and you can erase what you want and not have it automatically decide what wants changing.
using curves is how a got the result about of tom sykes but i up'd the contrasted and other little things hence why it look a tad extreme but i like it.
