Went to a local farm shop today, they also have their own butchery and I made the mistake of asking if they had any chateaubriand...they did.

I managed to get this pic before I finished it as if anyone who loves red meat that you can cut with a spoon has not had this cut, cooked this way, you NEED to do it!!!

Off to the pub to wash it down.....

My dad used to refer to the way I like meat cooked as:

"So a decent vet could get it back on it's feet."

but it's only been seared its not cooked. now if you could roll that in some nice brussels pate and then roll in short crust and sprinkle some sesame seeds on stick it in the oven for 30-40mins i would be down in a jiffy.

Not bloody MBK...no blood on plate and that was half way through. If you rest it, you get no blood :-)

Nope...seared, then cooked in the oven for 25 minutes to 135 degrees...perfect medium rare...no blood, just pink all the way through :-)

do you know why chefs prefer to cook rare steaks.. it takes less time

That looks amazing. Exactly how steaks should look. They taste better rare. Well the good stuff anyways.

Those that say that it's bloody, actually you should know that it's not blood that's coming out of stakes. After the animal is slain, it's also drained of blood and very very little of it remains in the muscle tissue.
What actually comes out is just water. Meat flavored water ;)
And yes, I am an annoying little f*ck

I was going to get a couple of big steaks, but when I saw that they had this, I just had to cook it whole and just cut it in half for us after resting.

You are supposed to slice chateaubriand, but stuff that. Roast it, then eat it like a man I say :-)

Lovely, cooked to perfection.

Take it horns out, wipe its **** and slap it on the plate.

We always used to share a chateaubriand, take one joint. Sear it to seal and then roast. Yummy cut it in two serve with new potatoes and fresh veg. Then off to fat fighters.

I have to admit I used to like my meat burned. But too many years of working in France taught me how my steaks should be cooked. Although the meat juices mingling into a bernaise sauce did nothing for the wifes like of a French "medium" because I did not know the French for incinerate it when we ordered.

It is also a protein called Myoglobin which is what gives Meat it`s Red appearance and can be seen in the Water the comes out upon cooking .

I had never heard of this cut of Meat before , I shall certainly keep my eye out for it in future .
