Is it ok to replace just one of the discs on my 99 curvy?

Yes, I'd say so.
If they're worn, I'd rather do the pair, and I tend to change pads together, but you'll not cause problems beyond having components that aren't evenly worn both sides.

At the end of the day you go to do what you feel safe with, but, if I was changing discs I would change both, along with the brake pads and brake fluid.

It is like chains and sprockets. Some change just the chain, some change chain and one sprocket, but, I do all three just so I know it is all new and gonna last the same amount of time.

More expensive, yes, but, peace of mind is priceless

What condition is the other in? Get a micrometer out, you may find it's less good than you think.

If they're both on the point of needing changing, you can have a look for several companies that do discs.

Original Equipment can be surprisingly good value, call up your Suzuki dealer and get a quote

I'm a proper cowboy but brakes are the highest priority, working well they WILL at some point save your life, don't scrimp buy a pair of discs and new pads, flush the system and as has already been said piece of mind is everything!
