What would happen if you hit the kill switch while you're going a decent speed without pulling in the clutch? Would the rear wheel lock up?

No.
Just lose power and slow to a stop.
a kitten dies :'(
Or what Elliot says. It's the same as turning the ignition off with the key.

And if you switch it on again, you should get a nice big bang & possibly flames

And possible exhaust fire if theres a stack of fuel in there.

This was all the rage at the 1995 Motogp in Le Mans. Great fun & made me realise that the french really don't care about their bikes (well some of them!). My VFR400 backfired with the best of them.

Comes in handy when you're trying not to wake the neighbours and you live on an incline ;)

+1
I don't know the answer for sure as I've never tried it, but I would imagine that the bike would just roll to a stop under engine braking? I assume the vacuum remains the same/similar on an engine when off or on?
Also I think you only get a good bang on a carbed bike no?

Can't say I've noticed one (and I would hope I would at the dead of night) but then I only use it when I've slowed down to 10mph or so, not experienced using it when going any faster...

Its fun . Go around 60mph let off throttle and hold kill switch off for 3 secs then back on . Boom .
Or rev it to around 9K and do kill switch on and off really fast
