I'm cooking a mega chilli tonight, five hours in the oven. Using this shin of beef on the bone which cost me £7 for 1.3kg! The marrow is going to melt out, the meat is going to be fall apart tender... mm mm mm! Fresh salsa, sour cream, coleslaw and basmati rice. Heavenly.

This is the recipe: http://thequirkandthecool.com/2014/08/23/jamie-olivers-mexican-chilli/

Here's the star of the show.

I'll do an after pic later.

Anyone else cooking up a storm tonight?

Pete ;)

Went to the butchers this morning to see if he had any shins in. He brought out what was pretty much a full leg and asked how much I wanted :D

He's keeping it in the back for me so I can go and measure how deep my casserole pot is, so he can cut it to the right size.

You won't get service like that in a supermarket!

Awesome!

If you're going to use the recipe I posted, add an extra can of water with the tomatoes. I think it went a bit dryer than it should. Don't skimp on the cooking time!

I tried this, went with the third can of tomatoes and a second can of the canellini beans, and it worked very well; I did leave the lid off for the last 15 minutes to ensure it wasn't to wet.

Tasted great and went down a storm, thanks for the link:):)

Looks like I've started something!

Next time, I'm going to cold smoke the shin for a day before cooking it. It'll be a big one cos I'm cooking for my relief at work!

A whole day? I've not done cold smoking YET, but wouldn't a whole day be too much?

What cold smoke set up you got? Do you have one of those smoke generators like this:

Not the tastiest piece of beef I've ever had, but still bloomin nice.

I put this down to it being a boneless joint, so that's where it lost a bit of flavour

Can't beat roast beef & Yorkshire puds can ya

That's exactly what I got for my birthday. I love it when hints are taken.

Just back from the butchers with a piece of brisket and some ribs. Spicy rub rubbed on and they're smoking away quietly. Can't wait for tea!

I'm going to make steak and ale casserole today as I'm working from home so can slow cook it all afternoon. Went to the docs today and I've lost another kilo since my appointment last week so maybe eating some of this will help.
