"Tighten the drail plug to the specified torque...
Oil drain plug (M12): 21 N-m (2.1 kgf-m, 15.0 lb-ft)"

What does this mean and how do I do it? I have a socket set and some spanners, I have just been tightening things untill they feel right!

you need a torque wrench.
some bolts have a specified amount of stretch in them, on the torque wrench are two sets of calibration Neuton Metres / foot pounds (metric & imperial).

Generally if you know what you're doing you can get away without one on most of the outside bolts (but if in doubt get one), but don't go anywhere near the inside of the engine without it to hand.
