Just baked loads. My kitchen now smells of warm, ginger biscuity goodness.


Tasty too now the first batch are cool enough to eat. :twisted:

K, any chance of you bringing some along on the way to 'ring? I'm sure i could leave some non-essential items out of my luggage (water-proofs, tyre gauge, passport) to make room for home-made biscuits.

Heh heh, I don't think they'd last that long - in fact I don't think the load I made are going to last till the end of today!

I may just have to make some more over next 4 days, 23 hours and 55 minutes then. :wink:

Um, the measurements are approximate as I picked it up from my Nan - so that usually means 'cups', 'tea-spoons' and 'a good ol' dollop' and simply adding things until it 'looks right'! :wink:

12oz Self Raising Flour
7oz Caster Sugar
2-3 teaspoons of Ground Ginger
1 teaspoon of Bicarbonate of Soda
4oz Butter
3oz Golden Syrup
1 egg
Some grated orange rind if you've got it.

Cut the butter into small bit and melt in a saucepan with the syrup. Low heat or it'll burn. When all smooshy give a bit of a stir and leave on one side to cool a bit.

Sieve all the dry stuff together into a large bowl. (I.e. flour, salt, sugar, bicarb & ginger.

Beat the egg and add it to the dry stuff (along with the orange rind if you've got it), then pour in the butter/syrup mix.

Stir it round with a knife until you get a nice smooth dough.

Cut off bits and roll into balls and place on a greased baking tray. Flatten them a bit and slap in a preheated oven (Gas Mark 3 = 160 degrees C) for about 15 minutes.

Ease them off the baking try with a pallet knife or spatula and leave em to cool on a wire rack. They are really, really floppy at this point so if you don't have a wire rack and use your grill instead you may end up with wavy cookies...
... but they still taste great. :wink:

I generally use a doughball just a bit smaller than a golf ball. That will spread out in the oven to give you a good sized biscuit (3 to 4 inches across).
The longer you leave them in the crunchier they will be. Though personally I like 'em when they are still a bit chewy in the middle but all melty/crunchy on the edges.
