I have noticed when I switch my '01 SV650s off the starter makes a little screech (less than half a second)
Anyone else come across this?

I'm worried that the motor is engaging with the engine and not disengaging again until it is stopped.

I suppose really I should just bite the bullet and take it out.. however I haven't got hold of a paddock stand or lift yet, so would prefer to put it off til I did. Thing is, do I ride it in the meantime?

why do you need a paddock stand to take the starter off?

You're paranoid.
Make sure it's in gear, don't push or pull stupidly hard on anything while you're working on it, it'll be fine.

you wouldn't believe what you can manage to do with the bike on its side stand, even an engine swap is possible

Leaving aside paddock stands, about which you are paranoid :) The SV starter's constantly engaged, it's a clutched starter with the clutch mechanism inside the cases. I think this might be different from typical car starters, but I know nothing about cars so maybe not. I don't think you're going to see an awful lot when you remove the starter tbh...

So how should I proceed? Can I get rid of the noise?

Haven't the slightest idea. Sorry
