Anyone got any tips for when you are just over a stamp duty threshold? Eg, I give him a brief case full of cash?

Congratulations....stamp duty has varying level, a quick google search will bring it up.

We put in an offer of 131k in an attempt to get a different house a couple of months back. Our solicitor suggested to word the offer as £125k + £6k for 'fittings'. Works in Scotland anyway, hope you can get around it the same way down there.

I think there a good few rules about avoiding stamp duty that solicitors have to adhere to that'll make it tricky. I would hazard a guess that they're also duty bound to report any dodgy dealings if you make it plainly obvious what you intend to do. Doesn't stop you going outside the system though, but the trouble with that is things like when do you hand over the cash? On completion? And how can the seller be sure you will hand over the cash - because anything in writing is then a written admission of tax evasion. And that's probably a bad thing :D
I'd be tempted just to expect you will have to pay the stamp duty, I've long since learned that I can wriggle out of most things but taxes :D
The difference is more that 10% of the value. Doesn't look like I can get out of it.
