Handling doesn't feel significantly different. Some people on the forum have fitted 180's on 5.5inch rims and report that the bike still turns in quickly. The contact patch is slightly bigger in width because the tyre has an extra 1/2 inch of width at the rim, so its curve across the profile is flatter and more of it contacts the ground. Whether or not this equates to significantly more grip is debateable.
