Most of the tracks being jammed to on youtube still have all of the components in the track...you can buy some tracks from karaoke sites though, but they'll usually only be popular vocal-based songs.
You won't be able to get hold of the stem files for songs (ie. individual instrument tracks) to create your own backing track, unfortunately.
