Default It's my round....

now that you are all paying attention (or at least the cross section most likely to care about my question)

I'm a spirit drinker, mainly with mixers but in the last year I've gotten started on Cognac, usually Remy Martin as that is stocked in the hotel we stay at with the company. I've recently tried the Remy XO variety and its very nice, definitely my preference. I've also tried hennessey XO at my own expense and found this preferable but not the paying part.

I've had drinks suggested: Rum and Black (Dark rum and blackcurrant cordial in equal measures) Cointreau and Coke (quite nice I think) and then after being told the above was "wrong" by a scot, I tried Cointreau and Baileys (two shots of baileys to one of cointreau)

So far I haven't met a spirit I didn't like to be honest, I've got some absinthe at home to try but haven't done as yet.

I'm after suggestions of perhaps run of the mill drinks to try next time I'm staying away on business.

I thought my luck was in this morning as we visited a hotel for a conference and they had an EXTENSIVE collection of cognacs including Remy Martin Louis XIII and Hennessey Paradis but unfortunately they were £87/shot!

I can't get away with that so I'm after suggestions along the above lines and will try them in the coming weeks.
