Do you mean that as soon as you connect the new battery, the starter motor engages, even if there is no key in the ignition? At this point the bike doesn't start up, just turns over?

If the above is correct, trace the positive wire from the battery top the starter relay on by the right side of the rider's seat. Check the terminals are not shorting on something.
