With ethanol ( AKA bug food ) in fuel these days the stabiliser is more important to stop acids forming in the fuel due to bacteria. The main problem is ethanol is hygroscopic and actively attracts water ( just like the alcohol based Ethylene Glycol in brake fluid ) but unlike brake fluid where the water dissolves in the Glycol and not allowed to pool, the water in fuel will dissolve in ethanol, not mix with fuel then sink and allow bugs to thrive.
