A friend of mine put me onto to this, it's a great map of the French Alps.
Published by IGN, it's called "Routes des Grandes Alpes"
It's a shaded relief map that highlights the scenic backroads through the Grand Alpes, but it also gives details of the hights and steepness of the various passes.
Available from Stanfords -
www.stanfords.co.uk (there site was down this morning) for about £6.00 plus carriage. You can get it from Amazon, but it's expensive & they don't stock it.
It's currently on the wall in my office as I ponder my choice of routes.. Just 16 days until I go on tour
If anyone else has any suggested maps/books, let me know and I'll make a list and sticky it.
