It’s not so much the geometry change, (if anything that would make the steering lazier/nicer for bumbling around on a commute through town ) it’s the aggressiveness of the profile meaning the front wants to fold in at every given opportunity.

Chunky and SV650Racer, I am talking road bikes here. The two are used under such different circumstances you cannot make a comparison, a trackbike is never going to be doing a 90deg turn into a little side road at 10mph … its never going to be going round a roundabout behind a lorry/bus/car doing 15mph …
