How about a BMW F800st? Starting to wonder about one of these for my next bike. No screaming sportsbike and not everyone likes the looks but a bit more power than the sv. Faired, panniers, optional abs and computer etc, still quite light and manoeuvrable, potentially comfortable for rider and pillion. Likely to be more reasonable on insurance than the 1000+cc jobs, particularly given your previous (!). Belt drive. You'd be looking at used only for this model but there are cheap ones to be had - a 2012 one on eBay/auto trader for £6k with only 650 miles on it! Or if you are desperate to spend more, the newer version? (GT?)
