Would my best bet for removal to be to re-install them on to the bike, bleed the brakes so there's some 'pressure' (is that the right word?) and then push them out as far possible using the brake lever, and then try again?

You can push them out with compressed air, I’ve used a 12v tyre inflator before to push pistons out. But it will depend on how crudded up/seized they are.
If you’ve not got a compressor then yes best way is to reconnect to the bike and use the hydraulic pressure to push them out
