I guess they're all much the same in terms of internal design - a straight through, perforated tube wrapped in wadding. Does length make a difference?

yes, a can does make a small difference. long cans give the torque lower in the rev range, medium cans will be around the middle while small cans are higher up. but its all splitting hairs in reality. plodding along at NSL you wont feel that much difference, its when you WOT you will feel it.
unless the can has baffled segments (SV original exhaust) then pretty much every after market slip on has a perforated tube with a wadding wrap and a "DB killer" bolted on the end.
