Default driving licence

if you have a UK provisional driving licence can you go for a holiday and pass your test in another European country?

Probably not.
I know if you move to the UK, while they will honour your home countries drivers license until you have passed the tests, you must get a full UK license.
And they do not recognise any license or training taken outside the UK towards your license. (at least for foreigners)
And that's cars or bikes.

Best advise is to contact the DVLA helpline.
