Go for a 750 !
That little extra grunt out of the corner makes a lot more relaxed ride, rather than chasing up and down gears. ridden identical 600 & 750 Gixxers back to back and the 750 is easier and less frantic making progress.

For road. Seen some 2001 r6's about 1500 so anything around tht would be good.
