Not quite, you just disconnect the HID entirely, and remove its "bulbs" and fit the standard bulbs instead- all the standard wiring is still there.

Not quite. The 'bulbs' for the HID run off a balast. Somewhere, the switching for the ballasts runs off the plug form the back of the original bulb. Soooo, depending on how you wire it up, it would be a matter of removing the HID bulb replacing with the H4 version, then unplugging the light plugs from the HID loom and plugging them onto the original bulbs if you see what i mean.
