2 tsp ground dried ginger

After a week, strain and keep the yeast culture (you can half it and use it to stat the next batch - I am making a double batch this time round)

To make the beer.

Take 2 pints water and 1 kg sugar, make a syrup by boiling it, add another 14 pints of cold water and the juice of 4 lemons and then the juice from the yeast culture.

Take six 2 litre drinks bottles and divide the liquid into them (this comes to about 1/4" above the label in a Pepsi Max bottle), add a tsp of sugar to each and squeeze out all the air, and put the top on.

Every day check the pressure and release if needs be.

Its ok to drink from day one - will be sweet and weakly alcoholic, leave for 4 weeks to mature properly then chill before serving.
Well the 1st batch is finished, three two liter bottles in the fridge.

Batch 2 was a double batch and I only sorted out half of it - the other half of the liquid from the gingerbeer plant is in the fridge, will come out tonight when I prep the rest of it.

Hopefully I will win a pressure barrel on ebay in the next couple of days so I can then empty the twelve 2 litre bottles into it and let it mature as a batch.

Then its just a case of getting the pressure barrel to the AR - 40 pints worth...

I quite like batch 1, and my neighbour that I gave a bottle to said it was fine as well

Maybe too much sugar? How much did you use?

Woo hoo, just won a 40pint Pressure Barrel on ebay for a tenner.

So will do an experimental mix, taking the 1st half of my double batch of Ginger Beer that has been brewing for the last week, and add the 2nd half to it, meaning that some of it will have the 4 weeks, and some of it will be at 3 weeks.

Should lead to a weaker, but sweeter product due to the second lot not having time to turn as much of the sugar to alcohol.

Now to work out if I can pack the pressure barrel AND my tent/sleeping bag for AR09...

My cloudy pear juice has done exactly the same. I've left it to run, once I can be bothered I'll just syphon it out leaving the floating brain behind. Either that or strain it and then syphon.
