it isnt officious Messie its organised..
cash will be ready . and dont worry about change I think everyone should just round up to the nearest fiver anyway and the extra can be divvy up tween those that have had extra outlay in time petrol and phone calls for organising this.. EG..mine is £40 camp. £6 breaky covering both days for us two £15 sat evening roast for us two £61 total. so £65 and you keep the change.. Keep it Simple.. no worries with coinage and change and the accrued extra should cover some overheads and outlay .. just an extra quid off every individual would cover your extra costs and give you a few drinks which you deserve ! its nice to be nice..

Messie: at the risk of not keeping it simple... what's the deal if I'm staying until sunday then deciding whether to stay an extra night depending on the weather, just pay you for the weekend and sort the extra day with the owners?
