Add some vegie oil to the pan and get that to "smoking" hot 1st then as Stu says, chuck the chops in - they will colour/crisp fast but still be lovely and pink in the middle.
Dont forget to season them - some salt and pepper on the side you are going to be putting on the bottom when they first go in just as they are going in and then season the top just before you flip them over - you should only have to flip once - you can see how cooked they are by looking at the side - when it gets to halfway, thats the flip-over point.

loads of marinade, olive oil, lemon, pepper and chopped up chilli. chargrilled proper hot so the fat gets smokey, but short enough to still get blood/juice p1ssing out when you cut it. mmmmmmmm hungy now
