We'll tell her how we are all experienced bikers, and it's not a dangerous as the general public would have you believe, in fact it's as safe as you want to make it. We'll even take her out on pillion for a nice smooth safe easy bimble, see if she enjoys it.

You need to talk. Tell her you love bikes and you're buying a GSXR, you're going to be as careful as you can and do some advanced training etc. but they're a big part of your life and very important to you.
If she says "no" then f*ck her off quick sharp as she's clearly too selfish to let you do what you enjoy.

Alternatively just tip up on the GSXR to her place and see what happens, I think I prefer this course of action.

Just get her told!
