What a plonker... After reading the service manual PDF, it looks like I have adjusted the STPS, not the main TPS. Weirdly it has had the right effect. I'll have to lift the tank and have another look under there and identify the correct item to adjust.

So, popped the tank up again today to take a nosy at the TPS and I'm now thinking I did do the correct TPS after all and not the STPS. The one I adjusted is connect to the main throttle linkage, the other one to the servo controlled linkages near the airbox.
