Default SORN for no MOT?

Do I need to SORN my sv because it doesn't have an mot?

No.SORN is for when the tax runs out.Having said that you wont be able to tax it if theres no MOT.

It has plenty tax left on it, but the mot has run out.

I'd rather just keep the tax on the bike. I can't find any info about what to do if I don't have an MOT. I won't be using the bike over winter

Just leave as is then and declare sorn when the tax runs out.

Only if you want to ride it with no mot. You don't need to declare sorn if your not using it.

As stated as long as the bike is not on the Queens Highway then until tax runs out you don`t need to SORN the bike.
