Default Thermostat removal?

After finding out my bike is running rich (only getting around 33mpg) i checked the coolant as recommended by the garage. thats sorted so on to the next thing on the list - the thermostat.

Basically i want to know:

Is it easy to do i.e. get in and out?
Is there any useful tips regarding the removing and putting back in of the air box and throttle body?

Not sure if this is normal either - not far from home noticed my temp on the speedo and it read 101 degrees. set off and within 200 yards it had dropped to 71 and i was only doing 30

What does it drop to when cruising?

They're a bit of a git to get at.

Its in the 70's or 80's, but its drinking fuel big time. Did a dyno test and its running rich, someone else suggested the fan isn't coming on which might be right bit not sure how to check it

its an '03. trying to check everything possible, as the last resort is a power commander, which I can't afford.

No fan at 101 degrees and that wouldn't make it use fuel.

How badly is it doing?

Sh*t the bed, that's a bit thirsty.

Is it running rich or misfiring? You looked at the plugs? Changed them? Dead rat in the airbox?
