Which VFR750? RC24, RC30 or RC36?

If so then that might just be water vapour. My GSXR does that when its been sat for a while and I start it up. My SV used to do that on cold mornings to until it had warmed up.

White smoke is normally water vapour, blue smoke is oil. Well in my experience anyway. Not sure what the cause of the oily smell is though.

Early or late RC36? (not that it really matters, I'm just curious now).

Anyway white smoke is normally coolant, do the usual check for oil in the coolant and mayonnaise in the oil. Could just be the amount of condensation in the exhaust though.

WRT leaking gaskets only head gaskets to worry about, cylinders are cast into the 'block', taking heads off isn't that big a deal and can be done with the engine in the frame. No cam chains to worry about which makes life easier.

If it has a rattly clutch that goes away with clutch in it most likely needs balancing.

No, the carbs. The crank doesn't rotate at a constant speed at low rpm, when the carbs are out I think it accelerates and decelerates quite harshly causing the clutch to rattle.
