F650 GS, the 798cc with factory lowered suspension and low seat. I'm flat footed with a bit of knee bend and I'm about a 30 to 31 inside leg.

Hmm, you're not the only one. I'm in a right pickle at the moment. I've hardly used the Street this year, its not that I don't enjoy riding her but I seem to be going for breaking myself on a bicycle more often.

I also know that I want to renew the seat padding and get the suspension serviced. But it's the catch 22, I'm hardly using the bike because it needs the work but because I'm hardly using the bike I don't want to spend the money...

Just don't know what to do...

I have a Tiger xrx 800 only short legs and I can get my feet on the ground.
It's still fun if lacking in the sports bike spirit.

I have the same engine in the F800GT. Got short legs but didn't need the lower seat option. A great all round tourer with good luggage options, nice comfortable suspension and excellent handling. Very capable and economical too, done 7,000 miles on it in 8 months. I looked at an R1200RT but too heavy and cumbersome. I like it but it doesn't stir the soul like a V twin.

Depends on the cost of keeping it per year. I have a running joke with the MOT tester as to the miles done since the last one. Although riding the bike always puts a smile on my face and for that it is worth every penny. There may be a time when I am unable to ride in which case its going to be a can am spyder

5'7 and a half (don't forget the half) 30" inside leg

V-Strom 1000 and a KTM EXC are no problem once you get used to them. Just slide a cheek off when putting your foot down.

Only bike I've really struggled with it a Ducati Hypermoto but that's light so not as much of an issue.

To be honest though It's rare I just go for a quick ride locally, the only riding I enjoy is either off roading on the KTM or a weekend (or longer) away touring. That's more about seeing new places though than the riding itself.
For fast sporty riding, take it to the track, then you'll really hate the road.
