Dunno about the rest but they are good on fuel and the best perfomance mods are suspension tweaks and good tyres.

Here are my best attempts at answering your questions:

Well straights are kinda boring, in other words I've got no idea. 0-60 acceleration on the 650 seems to be about 4 secs. The bike will quite happily reach 100-110 without a strugle, however you will have to coax it to get it to its 130 max speed.

I usually get 130 miles before the orange 'feed me' light comes on. I think it must average out about 40 miles to the gallon on country rides

If you want a nice bike to ride, do them in this order:
1. Put in a set of fairing protectors, if this is your first bike you WILL drop it
2. New tires, stock tires are plain awful
3. Get a new set of front springs, there are several manufacturers out there. I myself use a set of progressive springs as I feel is better suited for the real world & my riding style. Other people just put in a firmer single rate suspension
4. Get an aftermarket can and feel thunderous sound a V-Twin makes.

If you just want to look cool:
1. Get an aftermarket can and feel thunderous sound a V-Twin makes.
2. Do the list above minus step 4.

Suzuki do offer their own set of fairings. Note that the SV comes in 2 models, an unfaired naked model & a half faired model (The S model). Sharkskinz also sell a set of fairings for the SV650, so do 2wheeljunkie

Enjoy the ride, it's a very forgiving bike & more than fast enough in the right hands.
