I would have thought gum would be dangerous, hazard of choking whilst passd out and all that, but he's right it does seem to stop him vomiting!

It's essentially to even the pressure between the outer and middle ear, actually. It changes a lot with the altitude variations, and chewing something allows for the opening of the Eustachian tubes that connect your mouth cavity to the middle ear.
If you don't do this, at best it'll feel like your ears wanna pop out (anyone who's been on a plane must have felt this for sure during takeoff and landing). I believe the extreme speed at which the fighters change altitude may even do some damage to the tympanic membrane if this pressure is not evened out.

The guy mentioned that it was ginger cheming gum, and ginger is meant to be good for motion sickness.
Also, like Filipe says, pressure diff can be gotten around easily.
