Default Diabetic cake recipe

Anyone got a fail safe one?

I'm planning on making cakes and cookies on the Thursday ready for everyone's arrival on Friday but I'd like to include a cake suitable for diabetics so let me know if you have something suitable and I'll give it a go.

Now this weekend has my attention Cakes i can actually eat!
From memory, i remember from a while ago, wasnt SK mentioning some form of diabetic chocolatey/cakey goodness recipe?

I did one in 2010 as I was going to take a load of gluten free/diabetic friendly cake to the AR, but in the end I had too much else to do. The recipe worked though as a basic sponge that you could tailor to your own creativity. I think I gave it to my mum as only hand wrote it, so I will ask her later.

Cake without sugar, flour, oats, milk, cream or fruit, good luck. I've tried a few and getting a truly low carb (not just low sugar) that is edible is not easy.
Solution, eat normal cake, take more insulin. Job done.

As part of the AR entertainment can we just tell them it's a diabetic cake, but wedge it full of sugar anyway?
