Right then. I'm gonna have a go at making a chilli sauce.
I'm only using standard Sainsburys red peppers- don't want a habanero monster right now! I'm looking for something hot, on the sweetish side (got molasses for that purpose- I love molasses. Filthy sugar!). Perhaps with a barbeque edge and have Jack to throw into the mix. So- suggestions? |

As if by magic!
Basic sauce; Pureed chilli, cider vinegar to make it runny, add fresh lemon juice and salt to taste. Long shelf life. Smoke a few chilis by getting a lump of oak or fruit wood going, put it on the floor, flower pot on top, upside down. Another pot on top the right way up so the smoke passes through the holes, chillis in the top pot, lild on top. A few hours will do. Dry them overnight in the oven at it's lowest setting, add to the above recipe for chipotle. Cooked sauces use onions and chillis cooked and then added to the vinegar and salt base. They are good with fruit in, apricots are my fave. Not such a long shelf life. http://www.chileseeds.co.uk/ sell rare and ultra hot fresh and dried pods. The more endorphins, the bigger the "high" and the happier you feel. One of the plants I grew in 2008 was so hot, one tiny pod used to make me giggle like a chimp for an hour. Better than beer.

Class. I don't think I'll be able to smoke chillis for some time (and that depends on a dry spring/summer.)
I've got white wine vinegar. so I was thinking of a combination of fresh chillis (chopped fine), onion, garlic (not too much though), chopped tomatoes, molasses and jack d. I like quite hot- though not really effing damn "I can see through time" hot. I enjoy the flavour as well as the heat! I guess with the super hot stuff, you need to make sure that you don't have any commitments the next day and have some good reading material handy... |
