Preferably spring not tap water and definately room temperature not chilled. Ask wfm about the three drop trick, basically it emulsifes the natural oils, smooths the molecules without diluting the taste.

Just found another great Scottish export, "The red hot chilli pipers" i think they're great, they're playing at the Oban Hogmanay, shame Amanda can't get the time off i'd love to go, maybe one year.
