Another thing I don't always do, well able to get off and hold the bike to put it on the centre without using the side stand

Yeah but I didn't say I couldn't do it ;)

It's much less risky to do it from the side stand IMO...reason being you can feel for left centre stand foot down, then put the bike up straight and feel for the right one to go down too. If you do it with the bike already straight up, it's easier to overbalance it and have it fall away from you.
I don't think it will happen - but worth the extra risk when it's the same speed to do either (i.e. when I go to get off the bike I can swipe the sidestand down as I do it, no extra time required)? Not IMO ;)
