Anyway, back on topic - OOPS!

Get yourself a luminous sticker that says "Check your Oil" and stick it on your top yoke so you see it every time you put your key in the ignition.

Kilted Ginger did the "Unleaded Only" sticker for Petevtwin650, he's lying on a beach just now but if you PM him I'm sure he'll make you one and stick it in the post when he gets back.

If the engine has run low on oil then you would have been extremely lucky to have just done pistons/bores. Oil starvation on the pistons almost always results in a full or partial seizure, and if it frees off and runs again that sounds like a rattle rather than a knocking.
I think it's far more likely you've cooked the cams and a big end has picked up. I wish you well but I think you're giving yourself false hope with talk of pistons/barrels.

scoring, swarf, bearing play, burn marks and general damage.

First drop the oil and strain it through a pillowcase and see what swarf is in it.

If you drop the oil and look at it and feel it you should see swarf if the damage if bad enough.

My sv also seems to burn oil when I ride hard...
So I am paranoid about checking the oil...OFTEN...
