Thanks matey. I think that's just about everything. I'm not sure of which calipers to get though. Is it only the GSXR SRAD calipers that will fit or are there other options?

Depends how much you want to spend.
Brembo do some that would fit, But im guessing that the standard SRAD brakes are going to be a big improvement on the SV brakes any ways. |

If you decided you wanted to use Renthals or normal bars instead of clip-ons you could use these

You can also use calipers from any of the older gixxers, bandit 1200s, busas, TLRs, SRAD750s, loads of kwackers.
Basically any tokico or nissin in that "triangle" shape will have 90mm hole centers and the right offset. Those brembos you link are the 40mm mounting hole centre ones and they won't fit without adaptor plates. (anything from 1988(ish) up to 2000 had 90mm centres, anything since then but not radial got 67mm or something, since then it's been radial and mounting holes pointing the wrong way) |
