I love my Sv... but use it only for pleasure rides & therefore don't accumulate many miles.

I imagine my bike will still require a service one year after the 600mile one, but does anyone know what this is likely to cost if for example i have only covered 2000miles rather than the manual's 4000mile estimate?

Costs will vary but you're looking at around £100-120 for 4000 mile service

There's more to that service than just changing the oil and filters. If you are going to do your own servicing then make sure you do the full works. Go over the bike with a fine tooth comb. Once you miss a service your warrenty is no longer valid. So if you miss something and your bike breaks down, your on your own.
