I'd guess then that the bike was built (or at the very least shipped out the factory in a box) in 2001, hence it being a K1. But then it sat & didn't actually sell until 2003, so it was never registered with the folks at the DVLA until June 2003.
One reason for not registering a bike is that the Suzuki warranty starts on the day it's registered.
EDIT: This would also give a 'bonus' of an earlier bike, not actually moving, so having less miles on the clock
