I've ridden both, you should have got the 750. Its better its got more mid range and more torque. The 600's going to seem buzzy after the SV, and I bet in 6 months time you'll regret not getting the 750...
dont get me wrong the 600 is a great bike and it will have midrange, just not as much as the 750 does. You'll find after a while the GSXR voices will start talking to you and you'll spend alot of time at +10000rpm
IMHO the 750 has more of everything the 600 has. But I would say that I'm biased
