You would be stunned what is possible in the wet. At Brands Hatch Indy in April it rained for a few of the sessions. I got rid of all bar about 4mm of chicken strips in the wet (marked by where I'd worn the bobbling off the tread again). I never had a moment, and was by no means the fastest person out there, all on normal road tyres.
What the wet does do on the road is make the difference in grip of different surfaces more of an issue, man hole covers for instance can become less fun.
