I am 6'1 and the seat to floor height was never an issue, I jacked the rear end up on all the bikes to speed up the steering and get the SV set up for my riding style. If you feel your legs are a little cramped rear sets or foot peg raiser kits are the only option.
sry to crash a sound thick but on that website

it gives you a list of 25mm 30 40 etc does this mean it is 25mm longer than the standard ones?
